Gelato and Ice Cream, although they may appear similar in your search for a frozen dessert they actually differ in a couple of ways. The Italian Word “Vinci” means “you win” and when deciding between these two desserts, you win everytime with Vinci Gelato.
Gelato differs from ice cream because it has less air. If you go on a tour of an Ice Cream Factory, they will tell you that the most important ingredient in their Ice Cream is air. For Gelato, the INGREDIENTS are the most important thing. Ice cream is churned very fast to incorporate air and can have anywhere between 30%-70% air in it. Gelato is churned slowly to keep the texture creamy which results in much less air, usually around 10%-20% air.
To be called Ice Cream, a product must have a minimum of 10% milkfat in it, but this number can go up to 25% fat. Gelato has much less fat and can range from 2%-9% on the high end. Most Gelato will be made with about 4% or 5% milk fat, making it a generally more healthy option than ice cream.

Ice cream and Gelato both need to be kept cold, but how cold you keep your frozen dessert will affect the taste and texture. Gelato is kept at a warmer temperature than ice cream to preserve the flavor and soft creamy texture. Ice cream is kept very cold so it will be hard enough to scoop. With Gelato the temperature it is served at allows you to enjoy and really taste the flavors.
